I can’t believe it has been a year already! I have heard so many moms say just the same thing when their baby’s 1st birthday was approaching! Time flies and while juggling work, hobbies, family and friends, I also had to start planning Greyson’s 1st birthday party. We chose to have “A Little Red Wagon” theme for Grey since he has a red radio flyer wagon that he loves. With Pinterest and so many other great websites to be inspired by, figuring out decorations and planning was easy! Grey’s radio flyer was the centerpiece of the party so I kept everything in black, red and white. I also added a little vintage feel with galvanized steel serving dishes and burlap touches; I think it worked nicely. I am so happy with how Grey’s party turned out. This is a quick and simple salad that is a perfect summer dish. Serve as a healthy side or add grilled chicken for a delicious meal for you and your family.
2 teaspoons Dijon mustard
1 teaspoon honey
1 small shallot, minced
2 tablespoons red wine vinegar, preferably Banyuls
1/3 cup extra-virgin olive oil
Freshly ground pepper

1 quart strawberries, hulled—small berries halved, large ones quartered
