So, we have an ongoing “sweets battle” in my house. While we try to eat mainly healthy on average, my husband and I are a bit at odds on letting my 15 month old eat sweets after meals. I’m a big ol’ softie who loves indulging Greyson with ice cream cones and cookies. However, Grey’s dad is always the voice of reason, suggesting we limit his sugar intake primarily to special occasions. When I came across this recipe I thought it would make us all happy! It’s a simple recipe that’s 100% natural AND was a hit with Grey. Just take a look at that adorable messy face! It’s also a perfect end-of-summer treat. - 1/2 cup coconut water
- 1/3 cup lime juice
- 3 tablespoons honey
- 4 cups cubed seedless watermelon
- Place coconut water, lime juice, and honey in blender, then mix to combine.
- Place the watermelon into the syrup. Blend until smooth.
- Carefully fill popsicle molds and insert sticks. Freeze until firm. Makes 10 servings. Freeze Time is 5 hours. Find the recipe here
